The primary stabilizer for non-dairy coffee creamers, preventing coagulation when added to hot coffee. It is also used as an emulsifying salt in processed cheeses.

Why is DKP used in Coffee Creamer ?

It acts as a buffer to neutralize the acidity of coffee, which prevents the milk proteins in the creamer from curdling or “feathering.”

MKP (Mono) is acidic (pH ~4.5), while DKP (Di) is alkaline (pH ~9.0).
